The care in the process of transforming olives into oil begins at their delivery to the oil mill: in order to ensure that a good oil is produced from the olives, the starting point is the selection of the raw material, and therefore healthy and intact fruit.

INNOVATION IN THE OIL PRODUCTION
In 2019 we renewed our machinery following a twofold perspective: improvement of the final product quality and valorisation of the by-products linked to the entire process
Our facility works in full in two phases, eliminating the addition of mixing water. This leads to a significant improvement in the quality of the final product. Many organoleptic elements of the oil are water-soluble and with classic three-stage processing they risk binding with water and being expelled in the separation process. In the two-stage process instead, the oil retains its organoleptic properties and can release superior aromatic and fruity contents. The extraction process is done exclusively cold by setting processing temperatures on a PLC that never exceed 27-28 celsius degrees in order to maintain the qualities of the oil.
Furthermore, the focus on well-being also led us to look for products that are not common in the oil industry. In fact, in most oil mills, pipes are used to connect the several machines of various colours within which the paste and oil travel. These pipes are mostly made of plastic which, in order to be flexible, needs phthalates that are toxic and are a threat to human health. After significant research, we contacted a leading company in the sector that allowed us to include TPHF (Total Phthalates Free) tubes in our production process - free of any carcinogenic or toxic substances derived from plastic.
