Olive cultivation in the lower part of Lazio is not easy. The impervious terraced lands do not allow mechanised harvesting so this is done completely by hand. However, the hard work and devotion to carry out this olive cultivation of “resistance” are transformed into aromas and scents that only this territory can release.

We are inspired in what we do by the Greek myth from which the olive oil tree takes its origin
At the center of our logo is the goddess Athena, competing with Poseidon for the sovereignty of Attica, a region of ancient Greece. The two challenged each other in a dispute over who would offer the most beautiful gift to the Athenian people. Poseidon hurled his trident to the ground and raised a horse, a powerful and swift animal that could ensure victory in battle. Athena, on the other hand, striking a rock with her spear caused an olive tree to rise from the ground with multiple beneficial functions: to illuminate the night, feed the people and treat wounds.
Zeus, judge of the challenge, crowned Athena ruler of Attica, as her invention was more peaceful and useful to the people. In addition to the myth, there is a reference to territoriality in the logo, given by the three "S "s (of the Italian words Sole, Sasso e Scure) surrounding the goddess and embodying the idea of the significance of olive growing in our areas. Sole | Sun: vital source for every organism; Sasso | Stone: the calcareous origin of our soils; Scure | Hatchet: so called in ancient times the axe.

MONOCULTIVAR ITRANA
Well-balanced and harmonious, it has a deep green colour to the eye. On the nose it releases a medium fruitiness that envelops the sense in a harmonious complex of scents reminiscent of freshly mown grass and aromatic notes in which thistle and artichoke emerge. On the palate there are balsamic flavours of wild herbs such as wild mint, the thistle is again noticeable and also the typical peculiarity of the Itrana: the green tomato. With a robust structure, the bitterness and spiciness stand out, which in a balanced manner embrace the taster in a harmony of positive sensations.
IN GASTRONOMY
Preferably used 'raw' on boiled food (boiled meat, vegetables, legumes...) and salads. It combines perfectly with soups and is sublime with roasts and boiled fish.

MONOCULTIVAR LECCINO
Balanced and delicate, it has a green colour to the eye, with reflections tending towards golden. On the nose it recalls freshly cut grass and freshness, with a light fruitiness. Notes of fresh almond and tomato are perceived on the palate, it is round in taste and gives a slight herbaceous sensation. Harmonious and balanced bitter and spicy notes, ranging from light to medium.
IN GASTRONOMY
Ideal for risottos and cheeses. Its delicacy enhances fish, both boiled and raw.
Cerere

Balanced, its appearance is green tending towards golden. On the nose it presents notes of pleasant freshness, freshly cut grass and slight aromatic notes of thistle. On the palate it is enveloping with a balanced and delicate bitterness and spiciness.

Excellent for enhancing the taste of meat and vegetables, as well as for legumes and soups.
